This coffee has grown in the famous Cauca Valley in Colombia. It comes from the ASCAFE association who represents 3.700 producer families in Colombia. ASCAFE helps farmers by sharing agricultural practices, analyse their green beans and preserve the traceability of their productions.
The association’s goal is to change the overly productive agricultural model in southern Colombia to a more sustainable model. Besides they promote the well-being of women in the region and encourage the young generation to start or take over family plantations by launching an academic program at schools.
The coffee is decaffeinated by using a natural method involving sugar cane. Firstly, they steam the green coffee beans to open their pores and then they are rinsed in the ethyl acetate (fermented sugar cane -ethanol with acetic acid) to remove caffeine. Then the beans are dried to 10-12% humidity. Lastly to seal the pores the beans, a natural wax is used. The wax does not affect the flavour, fragrance or aroma of the coffee. This process removes 97–99% of the caffeine from the coffee.
It's an outstanding good, decaffeinated coffee with a juicy and chocolaty character. Besides we roast this coffee light to make it suitable for both filter and espresso.
