There is a growing number of producers in Brazil that are focusing more on cup quality than volume. These producers approach growing, harvesting and processing with a great attention to detail. Tarcízio Aldo Zugliani is one of these producers. He has bought the farm Fazenda Sao Francisco da Bela Vista in 1993 and over the years he has made big improvements. For example, he has built coffee drying terraces and has invested in better processing equipment. Besides he replanted the farm with young sprouts to increase productivity and quality.
These cherries are removed mechanically by a machine which vibrates the coffee tree. This way only the ripe cherries will fall off on the cotton cloths. With this varietal, Yellow Cactuai, the cherry turns yellow instead of red when it is ripe. After the cherries are carefully picked, they are washed, pulped and dried on the patios.
The altitude and volcanic soil in Brazil are prime conditions for a balanced, well-bodied coffee. In our roastery we want to unlock these qualities. Expect a classic flavour profile with soft acidity and hints such as almond, milk chocolate and plum.
