Brazil Santa Rosa
Santa Rosa Estate exists since 1986. The area that the Matuck family bought 30 years ago hasn't been cultivated at that time. After a lot of hard work, an area of 150 hectares of coffee plants was created. The family has also developed a facility for themselves and the neighbor farmers to dry and store their coffee.
To ensure uniform and high quality coffee berries, Santa Rosa uses a strict selection process. Unripe berries are removed and processed separately. The flesh is removed by an depulper with removes most of the fruit and mucilage. Without fermentation or extra washing, the beans are laid on drying beds for a week. When the dried beans contain a 12% moisture, they are moved to Cocarive warehouse in Carmo de Minas. Here they rest 2 to 4 weeks before the quality is tested by the quality team.
